Taipei Chicken With Mixed Greens: Date Added: 11 Nov 2009

2 cups shredded cooked chicken -- warmed
1 cup packaged crisp chow mein noodles
1/4 cup thinly-sliced green onions
1/4 cup soy sauce
2 tablespoons toasted sesame oil
2 tablespoons rice vinegar
2 tablespoons water
2 teaspoons sugar
2 teaspoons grated fresh ginger root
1 small red or green jalape├▒o pepper -- seeded, and
finely chopped - (1 tbspn)
4 cups mixed fresh salad greens

Cooking Instructions

In a large mixing bowl combine the chicken, chow mein noodles, and green onions.

In a small saucepan stir together soy sauce, sesame oil, vinegar, water, sugar, gingerroot, and jalape├▒o pepper. Bring to boiling, stirring to dissolve the sugar. Remove from heat and pour over the chicken mixture. Toss to mix. Serve atop mixed salad greens.

This recipe yields 4 servings.

Comments: You could add about a half cup of wine or dry sherry to the poaching liquid or to the microwave dish when cooking the chicken to add flavor and help keep the meat moist.
