1 whole chicken breast
1 slice fresh ginger -- squeezed through
a press
2 garlic cloves -- crushed
1/4 teaspoon freshly-ground black pepper
1 teaspoon sesame salt
1 tablespoon soy sauce
1 scallion -- sliced thin
Divide the chicken breast into 4 equal pieces. The 2 thick ends are to be cut almost through and folden open (butterflied). Mix the chicken and all the other ingredients together, rubbing the seasonings into the meat with your fingers. Marinate for at least 1 hour.
Grill over charcoal or in a gas or electric broiler for about 3 minutes, or long enough to cook the chicken through without drying it out. Turn the pieces over once during this time.
Serve warm with rice, salads and side dishes of your choice.
