12 oz onion -- chopped
4 cloves garlic -- minced
2 inch fresh ginger root
1 pint red wine
1 olive oil
1 flour to thicken
1 juice of:
2 orange
2 lime
1 lemon
2 tablespoon soy sauce
2 teaspoon capers
1 tablespoon malt
2 tablespoon molasses
2 teaspoon mustard
1 teaspoon chili sauce or tabasco
1 spices:
1 pinch nutmeg
2 pods
4 cloves -- ground
1/2 teaspoon allspice
1 black pepper
1 cardamon -- ground
Chop the onions, garlic and ginger and slowlycook in the oil until soft. Add flour to thicken ( thin if you want to marinade). Add everything else and cook for half an hour.
