Honey-Ginger-Chili Chicken: Date Added: 10 Nov 2009

Ingredients

3 tablespoon shortening
3 tablespoon butter or margarine
1/3 cup all-purpose flour
3/4 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon pepper
3 lb chicken
1/3 cup honey
1/3 cup chili sauce
1/3 cup soy sauce
1/2 teaspoon ground ginger

Cooking Instructions

Heat oven to 425F. Heat shortening and butter in baking pan, 13x9x2 inches, in oven until melted. Mix flour, salt, 1/2 teaspoon ginger and the pepper. Coat chicken pieces thoroughly with flour mixture. Place chicken skin sides down in pan. Bake uncovered for 30 minutes. Turn chicken; bake 15 minutes.

Remove chicken. Drain fat; line pan with aluminum foil. Return chicken to pan. Mix honey, chili sauce and 1/2 teaspoon ginger; pour on chicken. Bake 15 minutes, spooning honey mixture onto chicken every five minutes. serve immediately or refrigerate and serve chilled. 6 servings.

The first time I tryed this I used worcestershire sauce instead of soy sauce and it worked great.

Yield: 6 servings
