1 small onion, chopped
1/4 cup Italian Dressing
1 cup of carrots, sliced
1 cup of celery, sliced
1 can 25%-less-sodium chicken broth
2 cups instant white rice, uncooked
1 tsp. grated lemon zest
1/4 cup Parmesan Grated Cheese

Cook and stir onions in dressing in large saucepan on medium-high heat 2 min. or until tender. Add veggies; cook 2 to 3 min. or until the veggies are tender.
Add broth; stir. Bring to boil.
Stir in rice and over. Remove from heat. Let stand 8 min. Stir in lemon peel and Parmesan cheese.
