2 (3 pound) whole chickens
1 tablespoon brown sugar
1 tablespoon sea salt
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons paprika
1 teaspoon dried oregano
1/2 teaspoon dry mustard
1/2 teaspoon celery seed
1/4 teaspoon cayenne pepper
Preheat oven to 425 degrees F (220 degrees C)
Mix all the ingredients together and rob the spices on the chicken skin.
Add a little water in the pan and put the chicken in the pan.
Roast for 2 hours or until the chickens are no longer pink at the bone and juices run clear.
