1/2 cup goat cheese
3 c. tablespoons of plain yogurt
2 c. tablespoons chopped fresh basil
Salt and pepper to taste
4 whole wheat tortillas
1 can of flaked tuna, drained
2 cups chopped vegetables of your choice (carrot, shallot, spinach, yellow or red pepper ...)
In a small bowl, combine cheese, yogurt and basil until a spreadable texture.
Salt and pepper to taste.
Spread this mixture over the entire surface of tortilla.
Divide the tuna and the chopped vegetables evenly.
Roll up, applying pressure to the vegetables and cheese stick.
Cut each into 2, 4 or 8 pieces and serve.
