Makes: 24 patties

2 cups grated zucchini
2 eggs, beaten
1/3 cup finely chopped onion
2/3 cup white spelled flour
2/3 cup grated Parmesan cheese
1/2 cup grated goat cheese (or other)
pinch of salt (or to taste)
pinch of pepper (or to taste)
1 c. tablespoons parsley
1/4 c. teaspoon powdered rosemary
1/4 c. savory tea powder
1 cup oil for frying

In a bowl, combine all ingredients except oil. Stir well.
Heat oil in large saucepan deep enough.
Using two tablespoons, and add to the preparation and allow to brown both sides of each cake, making sure they do not touch during cooking.
Place patties on paper towels warm. One can sprinkle a little parmesan, if desired.
