1 large avocado
1 / 2 lemon
2 medium tomatoes
6 ounces Matane shrimp (175 g)
For the seasoning:
1 / 2 lime
A small bunch of cilantro
1 / 2 cup plain yogurt (125 g)
1 tbsp. teaspoon granulated sugar
Salt and black pepper
Prepare the dressing: lime brush under warm water. Grate zest over a small bowl, reserving enough to garnish the salad. Squeeze the lime over the bowl. Wash and dry cilantro. Chop the equivalent of a tablespoon and add the lime juice. Stir in yogurt and sugar. Salt and pepper. Whisk well.
Cut the avocado in half and pit. Peel and cut into strips that you will have on plates. Drizzle with lemon juice.
Cut tomatoes into slices. Arrange on plates with slices of avocado and shrimp. Drizzle with dressing and garnish with lime zest and cilantro sprigs.
