1 lemon
4 small pears
Salt and black pepper
4 oz (100 g) mixed salad greens already prepared
12 thin slices of Parma ham or posciutto (1 / 2 pound or 200 g)
2 1 / 2 oz (75 g) Parmesan cheese in one piece
4 tbsp. tablespoons of extra virgin olive oil

Cooking Instructions

Squeeze the lemon. Pour the juice into a bowl. Wash and dry the pears. Cut into quarters, remove seeds, then cut each quarter into 3 or 4 slices. Develop As in the lemon juice. Black pepper, and toss gently.

Arrange the salad on 4 plates. Garnish with pear slices and slices of Parma ham rolls. Salt and pepper.

Using a vegetable peeler, cut Parmesan into thin chips, directly over the salad. Drizzle with olive oil and serve.

Makes 4 portions
