5 cups vegetable broth
3 slices of country bread stale
1 / 2 onion or 1 shallot
1 1 / 2 pound large mushrooms
3 sprigs of parsley
2 tsp. at the table with olive oil
1 / 2 small clove garlic
A pinch of nutmeg
Salt and pepper

Cooking Instructions

Bring broth to a boil. Soak the bread in a little cold water.

Peel and chop the onion or shallot. Clean and coarsely chop the mushrooms. Wash, dry and chop parsley.

Heat oil in large saucepan. Sauté onion. Peel garlic and crush it over the pan. Add mushrooms. Cook until they have made ​​their water, then add the parsley.

Squeeze the bread. The stir into mixture with the broth and nutmeg. Cover pan and simmer for half 15 minutes.

Place the soup in a blender so that it is grainy. Heat, salt and pepper. Serve immediately.

Makes 4 to 6 servings
