pastry for two crusts for 9-inch diameter
1 cup raisins (optional)
3 eggs
1 cup corn syrup
2 / 3 cup packed brown sugar
1 / 3 cup butter, melted
1 pinch salt
Preheat oven to 375 degrees F.
Roll pie dough into twelve 5-inch round diameter. Place each circle of dough in a muffin pan with 3 inches in diameter, without pushing it too. Sprinkle bottom of each crust with raisins, if desired and refrigerate.
In a medium bowl, mix together eggs, corn syrup, brown sugar, butter and salt. Pour over raisins.
Bake 20 minutes or until mixture is taken. Cool on a wire rack in pans 5 minutes. Unmold and cool completely.
Makes a dozen tartlets
