2 cups all-purpose flour
1 / 2 cup sugar
1 tsp. tablespoon baking powder
1 tsp. teaspoon salt
1 / 2 tsp. teaspoon baking soda
1 1 / 2 cup shredded cheddar cheese
2 eggs
1 cup plain yogurt
1 / 4 cup melted butter
* Apple Butter
Preheat oven to 400 ° F.
In a large bowl, combine flour, sugar, baking powder, salt and baking soda, stir in cheddar.
In a small bowl, lightly beat eggs. Stir in yogurt and butter. Pour at once over dry ingredients and mix just until moistened. Divide batter evenly among 12 large greased muffin cups.
Bake 18 minutes or until toothpick inserted in center comes out clean. Cool on a wire rack in pans for 10 minutes. Unmold and cool completely. Serve with apple butter.
* Apple Butter: Beat cream 1 / 2 cup softened butter, 1 / 3 cup apple jelly and 1 / 4 teaspoon of. teaspoon ground cinnamon. Makes about 1 cup.
