3 / 4 cup all-purpose flour
1 1 / 2 tsp. teaspoon baking powder
1 1 / 2 tsp. teaspoon sugar
1 / 4 teaspoon of. teaspoon salt
1 cup shredded cheddar cheese
1 egg
1 cup milk
2 tsp. tablespoons melted butter
* sauteed apple wedges
maple syrup
In a medium bowl, mix flour with baking powder, sugar and salt. Stir in cheddar.
In a small bowl, lightly beat the egg. Stir in milk and butter and pour at once over dry ingredients and mix just until moistened.
For each pancake, spread 1 tsp. tablespoon (15 ml) scoop of batter into a skillet or on a hot griddle, lightly greased. Cook the pancake over medium-high heat until bubbles form on the surface, the back and brown the other side. Serve with sauteed apple slices and maple syrup.
* Peel apples, cut into quarters and cook in 1 tsp. tablespoons butter until tender.
