Turkey Breast with Parmesan: Submitted by: Bernie Mack | Date Added: 2 Jan 2011
Listed in: Poultry / Poultry - Turkey
Ingredients

1 / 2 cup grated Parmesan cheese
1 / 2 cup bread crumbs
2 pounds of boneless turkey breasts, skin removed, cut into 8
1 / 3 cup all-purpose flour
2 eggs, lightly beaten
butter
3 cups spaghetti sauce or pizza, divided
2 packages of mozzarella cheese slices of 200 g

Cooking Instructions

Preheat oven to 350 degrees F.

In a shallow dish, combine the Parmesan with the breadcrumbs. Flour the slices of turkey, then dip in egg and then coat with bread crumbs with Parmesan. Shake gently to remove any excess and let stand on wire rack for 10 minutes.

In a large skillet, melt some butter. Sauté the sliced turkey, a few at a time, until browned on both sides. Add butter as needed.

Spread half the spaghetti sauce in a rectangular dish with a capacity of 3 liters, alternating layers of turkey and mozzarella. With a spoon, place the remaining sauce around the edge of the dish.

Bake, uncovered, 25 minutes, or until meat is heated through.

Makes 8 servings
