Ingredients

2 tsp. tablespoon butter
2 tsp. tablespoons sliced green onions
2 cups thinly sliced fresh mushrooms
1 cup thinly sliced carrots
1 cup thinly sliced celery
seasoned salt
1 pound fish fillets (thawed if frozen)
4 tsp. tablespoon lemon juice, divided

Cooking Instructions

Preheat oven to 350 degrees F. In a large skillet, melt the butter over medium heat. Sauté the shallots, mushrooms, carrots and celery until tender-crisp and liquid has evaporated, salt to taste.

Cut a sheet of aluminum foil into four squares of 12 inches (30 cm) square, place the shiny side up. Divide vegetable mixture in the center of the squares of foil and cover with a piece of fish. Sprinkle each serving with 1 tsp. teaspoon lemon juice. Fold half the foil to form a trriangle; seal the corners.

Place the parcels on a baking sheet with shallow. Bake 15 minutes or until fish flakes with fork. Serve in the foil, cut a hole in a cross on top of each papilotte.

Makes 4 servings
