6 cup Pillsbury BEST all Purpose flour
2 cup sugar
3/4 cup instant nonfat dry milk
1/3 cup finely chopped crystallized ginger
3 tsp baking powder
2 tsp salt
1 tsp ginger
3/4 tsp baking soda
Lightly spoon flour into measuring cup; level off.
In large bowl, combine all ingredients; mix well.
Store in airtight container at room temperature or in a cool, dry place.
For gift-giving, measure 3 cups of mix (by dipping cup into mix); place in airtight container or resealable food storage plastic bag.
Yield: 8 cups mixNOTES : Recipe Variations: Merry Cranberry Ginger Muffin mix: Add 1/4 cup chopped sweetened dried cranberries to each package of mix.
Merry-Pecan Ginger Muffin Mix: Add 1/4 cup pecan pieces to each package of mix.
Merry Apricot Ginger Muffin Mix: Add 1/4 cup chopped dried apricots to each package of mix.
