8 flour tortillas
8 ounces brick cheese Canadian, thinly sliced
8 ounces Colby cheese, Canadian, thinly sliced
Fresh Tomato Salsa
1 large fresh tomato, diced
1 small white onion or red, diced
1 jalapeno, seeded and diced
2 to 3 tbsp. chopped fresh cilantro, chopped
1 tsp. tablespoons freshly squeezed lime juice
salt and pepper to taste
Preheat oven to 400 ° F. Butter one side of tortillas. Place them on ungreased cookie sheets, buttered side up. Bake 5 minutes out of the oven.
Cover tortillas with slices of brick and Colby. The return to oven 5 minutes or until cheeses are melted. Remove from oven.
Meanwhile, in a medium bowl, mix all ingredients with fresh tomato salsa. Garnish quesadillas with salsa and serve hot.
