1 / 4 cup butter
3 cups chopped onions into quarters, then thinly sliced
1 1 / 2 cup water
1 1 / 2 tsp. soup mix chicken broth
1 3 / 4 cup milk
1 / 4 cup all-purpose flour
1 1 / 2 cup shredded Swiss cheese, divided
Salt and pepper
Butter Croutons
In a large saucepan, melt butter over medium heat. Sauté onions until they are tender. Stir in water and chicken broth mixture. Bring to a boil over medium-high heat. Reduce heat. Cover and simmer 15 minutes.
In a bowl, gradually stir milk into flour and stir until the mixture is smooth. Pour into saucepan and cook over medium heat, stirring constantly, until mixture boils and thickens. Remove from heat, add 3 / 4 cup Swiss cheese and stir until cheese is melted. Salt and pepper to taste.
Preheat the broiler. Pour the soup into ovenproof bowls, sprinkle with Buttered Croutons. Top with remaining Swiss cheese and grill.
