2 cups yellow split peas
6 cups water
2 cups chopped cooked ham
1 cup shredded carrots
3 / 4 cup chopped onion
1 / 4 cup butter
2 cups milk
1 / 4 teaspoon of. teaspoon cayenne pepper
Salt and pepper
Put the peas and water in large saucepan. Bring to a boil over medium-high heat, boil 2 minutes. Remove from heat, cover and let stand 1 hour. (Do not change the water).
In the saucepan, add ham, carrots, onions and butter. Bring to a boil over medium-high heat. Reduce heat, cover and simmer 35 minutes or until peas are tender. Stir in milk and cayenne pepper, salt and pepper to taste. Reheat if necessary and serve.
Makes 8 servings.
