1 medium onion, chopped
1 cup finely chopped tomatoes
1 1 / 2 tsp. tablespoons flour
1 cup milk
1 1 / 2 cup shredded Canadian Cheddar cheese
2 tsp. chopped jalapeno peppers or chopped small
hot pepper sauce or chili powder
Tortilla chips
In a medium skillet, melt the butter. Over medium heat, to cook the onion and tomatoes until the onion is tender.
Place flour in a small bowl, gradually add the milk well. Pour into pan. Continue cooking over medium heat, stirring constantly, until mixture boils and thickens. Remove from heat;; incorporate cheddar and stir until melted. Stirring constantly, add the peppers first, then the hot sauce. Serve warm with tortilla chips.
