2 potatoes to bake, medium
melted butter
Salt and pepper
1 1 / 4 cup finely grated Canadian Cheddar cheese
6 slices bacon, cooked and crumbled
3 tbsp. tablespoons finely chopped shallots
Preheat oven to 375 degrees F.
Cut a thin slice from each end of potatoes. Detail then the potatoes into slices 1 / 4 inch (5 mm) thick. Pat dry with paper towels, then arrange in a single layer on shallow baking sheet, lightly greased.
Brush potatoes with melted butter, salt and pepper.
Bake 10 minutes or until potatoes are tender. In a bowl, combine cheddar, bacon and shallots; spread this mixture over the potatoes. Continue baking 5 minutes or until cheese is melted
Makes about 30 appetizers.
