1 cup sugar
2 tsp. tablespoons water
1 tsp. tablespoon lemon juice
3 eggs
2 cups warm milk
6 slices bread, cubed
2 apples, peeled, coarsely chopped
1 tsp. tsp vanilla extract
1 / 2 cup maple syrup
In a small heavy saucepan, combine sugar, water and lemon juice. Cook over medium heat, without stirring, until the mixture gives a golden syrup, 8 to 10 minutes. Pour the caramel into a greased soufflé 7 inches (18 cm) in diameter. Tilt pan in all directions to spread the caramel into the bottom and edges.
Combine ingredients and cook for 5-7 minutes at most until the caramel is golden.
In a large bowl, beat eggs, add the warm milk and bread. Let stand a few minutes to soften the bread. Add apples, vanilla and maple syrup. Mix and pour into pan and bake in a preheated 375 ° F for 35 minutes.
Cool on a rack before removing from pan. Serve warm or cold with custard.
