2 Cups BASIC COOKIE MIX
1/2 Cup old-fashioned or quick-cooking rolled -- uncooked -- oats
1/2 Cup raisins
1/2 Cup chopped nuts
1 egg -- unbeaten
2 Tablespoons milk
1 Teaspoon all-purpose baking spice OR -- see recipe
1 Teaspoon ground cinnamon
1 Teaspoon vanilla extract

Combine all ingredients until well blended. Drop prepared cookie dough by teaspoonfuls, approximately 2 inches apart, on well-greased baking sheet. Bake in preheated 350 oven 12 to 15 minutes. Remove with spatula to cooling rack. Makes approx. 4 1/2 dozen cookies.

VARIATIONS:

Substitute 1/2 cup chopped dates, dried figs, or mixed dried fruit for the raisins in the above recipe.

CHOCOLATE CHIP OATMEAL COOKIES--

Increase oats to 1 cup, and substitute 1 cup of chocolate chips for the dried fruit and nuts.
