3 Cups all purpose white flour -- preferably -- unbleached OR part white and part whole wheat flour
1 1/2 Cups granulated sugar
1 Cup dark brown sugar -- firmly packed
1 Teaspoon baking powder
1 Teaspoon baking soda
1/2 Teaspoon salt
1 Cup solid shortening -- butter flavor -- Crisco preferred
Combine all dry ingredients in large bowl. Cut in shortening with pastry blender until mixture resembles coarse meal. Store in container with tight-fitting lid.
Makes approximately 8 cups.
