1 1/2 Cups instant nonfat dry milk solids
1 Cup granulated sugar
1 Cup cornstarch
1/2 Teaspoon salt
Combine all ingredients and store in container with tight-fitting lid. Makes 3 cups mix, sufficient for 24 individual servings of prepared pudding.
TO PREPARE:
Stir mix in container before measuring. For each 2 servings, use 1/4 cup of Vanilla Pudding Mix and 1 cup of milk. Combine mix, milk, and 1 tablespoon margarine in small saucepan, and heat over very low flame, stirring constantly, until mixture boils. Boil gently, stirring, for 1 minute. Remove from heat and stir in 1/2 tsp vanilla extract or to taste. Pour into 2 individual serving dishes. Refrigerate; pudding will thicken further as it chills.
VARIATIONS:
Before preparing, add 1/2 tsp ground nutmeg OR 1/2 tsp all purpose Baking Spice (see recipe) to each 1/4 cup of Vanilla Pudding Mix.... OR, for liquid, use 1/4 cup Maple syrup and 3/4 cup of milk; reduce vanilla extract to 1/4 tsp.
