Grilled Sausage Sandwiches: Date Added: 9 Nov 2009

1 tablespoon olive oil
1 onion, chopped
1 clove garlic, minced
1 sweet red pepper, coarsely chopped
1 pinch hot pepper flakes
1 can 19 oz. italian spice stewed
1 tomatoes
2 tablespoon chopped fresh parsley
1/4 teaspoon each salt and pepper
4 italian sausages ( 1 lb)
4 crusty italian rolls
4 lettuce leaves
4 teaspoon freshly grated parmesan cheese

In heavy saucepan, heat oil over medium heat; cook onion and garlic, stirring occasionally, for 5 minutes or until softened. Add red pepper and hot pepper flakes; cook for 2 minutes.

Stir in tomatoes, parsley, salt and pepper; bring to boil. Reduce heat; simmer for 20 minutes or until thickened.

Meanwhile, cut sausages lengthwise almost all the way through. Open and place, cut side down, on greased grill over medium-high heat; cook for about 5 minutes per side or until crisp on outside and no longer pink inside.

Slice each roll in half horizontally; toast, cut side down, for 2 to 3 minutes or until just golden. Top each bottom half with lettuce and sausage; spoon tomato sauce over top. Sprinkle with Parmesan; cover with top half of roll. Makes 4 servings.

Yield: 4 servings
