2 tablespoons olive oil
1 kg steak, cut into 2.5 cm cubes
2 tablespoons of tomato paste
1 cup plain yogurt
1 cup beef broth
Basmati rice steamed

For Madras curry paste:
2 tablespoons ground coriander
1 tablespoon ground cumin
1 teaspoon of turmeric
1/2 teaspoon freshly ground black pepper
2 cloves garlic, crushed
2 teaspoons grated ginger
2 1/2 tablespoons lemon juice

Combined the ingredients for the curry paste in a bowl and set aside to add to the beef once cooked.

Cooking Instructions:

Heat 1 tablespoon oil in a large saucepan over high heat.
Add half the beef. Cook, stirring, for 2 to 3 minutes, or until browned. Transfer to a bowl.
Repeat with remaining oil and beef.
Reduce heat to medium.
Add the spice paste. Cook for 1 minute.
Return beef to pan. Cook, stirring, for 1 minute or until the meat is covered with dough.
Add tomato paste and broth. Bring to a boil. Reduce heat to low.
Cover and bake for 1 hour 15 minutes, or until beef is tender.
Bake uncovered for 15 minutes, or until the sauce has reduced and thickened slightly.
Add yogurt and stir.
Serve with rice. Garnish with mint leaves.
