Oil 30 ml (2 tbsp)
Courgettes 2 of 2 cm (3/4 inch)
3 onions, quartered
4 cloves garlic, crushed
Oregano 5 ml (1 tsp.)
Thyme 2 ml (1/2 tsp.)
Salt and pepper
1 can of 796 ml (28 oz) tomatoes, drained
1 can of 398 ml (14 oz) corn, drained
1 can of 398 ml (14 oz) drained peas
1 can of 398 ml (14 oz) sliced carrots
375 ml (1 1/2 cup) of mashed potatoes
125 ml (1/2 cup) grated cheddar or mozarrella
30 ml (2 tbsp.) Butter
Paprika to taste

Cooking Instructions:

Heat oil in skillet. Saute zucchini, onion and garlic for 8 minutes, until lightly browned.

Puree in food processor. Spread in a plate of 23 cm (9 inch) square baking dish. Season with oregano and thyme, salt and
pepper.

Superimposed on a platter, alternating tomatoes, corn, peas and carrots.

Cover with mashed potatoes and sprinkle with grated cheese. Sprinkle with hazelnut butter and sprinkle with paprika.

Bake 10 to 15 minutes under the broiler, until nicely browned.
