4 skinless salmon steaks to 6 ounces (175 g) about each
1 tablespoon. tablespoons olive oil

For the filling:
1 small mango
1 small papaya
A piece of 1 inch (2.5 cm) of ginger root
A handful of mint leaves
1 lime
Salt and black pepper

Cooking Instructions:

Preheat grill to medium. Cover the aluminum grid. Cut the mango flesh on each side of noyuau; remove it and cut it into cubes. Open the papaya in half, remove the seeds, remove the meat and dice.

Peel the ginger. Grate over the fruit. Wash, dry and chop the mint. Add it to the trim.

Wash and wipe the file. Take a few strips of zest for garnish. Grate above the rest of the preparation. Squeeze the lime. Add half of its juice to the mixture.

Salt the fruit, pepper and mix well.

Lay salmon steaks on the grill topped with aluminum, skin side down. Brush with olive oil. Salt and pepper. Drizzle with remaining lime juice. Broil 6 to 8 minutes to 4 inches (10 cm) of the heat without turning the fish.

Garnish with salmon strips of zest. Serve with fruit preparation.

Note: Serve this salmon with a simple green salad and possibly some new potatoes.
