Fried herring in Swedish: Submitted by: Jimmy | Date Added: 9 Apr 2012 Ingredients:

4 large herring fillets
1 small egg
Salt and black pepper
1 large red onion
3 sprigs of dill
Flour to coat fish
Oil for frying

Cooking Instructions:

Wash fillets and dry them well. Whisk the egg in a bowl with salt and pepper.

Peel the onion, then cut two thin slices and discard the middle ring. Finely chop the rest. Wash and dry dill. Chop into the equivalent of a tablespoon. Book 4 sprigs for garnish.

Sprinkle well with flour a cutting board. Top each half of herring fillets, skin against the board. Brush with beaten egg. Divide the center onion and chopped dill, over the entire length.

Brush beaten egg on the flesh side of the other threads. Cover the fillets packed in, skin side up. Press to seal the sandwiches. Flour and rub lightly to knock off the excess.

Heat a large skillet just enough oil to cover bottom. When it is hot, put it delicately stuffed herring. Fry 2-3 minutes over a low heat. Once the underside is golden, turn and fry another 2 to 3 minutes.

Drain on paper towels herring, in a dish, garnish with onion rings and dill sprigs.

Serve with red potatoes boiled and beet or apple slices fried.
