1 cup + 2 tbsp. tablespoons all-purpose flour
1 tsp. teaspoon baking powder
1 / 2 tsp. teaspoon salt
1 pinch of baking soda
1 / 2 cup butter, softened
3 / 4 cup packed brown sugar
1 / 2 cup ripe banana, mashed
1 egg
1 tsp. teaspoon vanilla
1 cup rolled quick oats
1 1 / 4 cup raisins
Preheat oven to 375 degrees F.
In a medium bowl, combine flour avecc baking powder, salt and baking soda.
In a large bowl with electric mixer, cream the butter until light and fluffy, gradually add brown sugar and bananas, egg and vanilla. Stir in dry ingredients, rolled oats and raisins.
On a cookie sheet, drop dough by tablespoons, up to 12. Flatten each spoonful into round 2 inches in diameter.
Bake 10 minutes or until edges of cookies are lightly browned. Remove from oven, remove from cookie sheet and cool on rack.
Makes about 3 dozen
