2 1 / 4 cups all-purpose flour
4 tsp. teaspoon baking powder
1 tsp. tablespoons sugar
1 tsp. teaspoon salt
1 / 2 cup vegetable shortening
1 egg beaten
1 cup milk
1 cup shredded cheddar cheese, divided
1 egg yolk, beaten
poppy seeds

Cooking Instructions:

Preheat oven to 450 ° F.

In a large bowl, mix flour with baking powder, sugar and salt. Add shortening and work with a pastry blender or two knives until the mixture has the consistency of coarse crumbs. Add egg, milk and 3 / 4 cup cheddar cheese and mix just until moistened.

On a lightly floured surface, knead dough gently about 20 times, adding flour as needed.

Place dough on ungreased cookie sheet and lower it into a circle 8 inches in diameter. Cut into 8 wedges, without separating them. Brush with egg yolk and sprinkle with poppy seeds.

Bake 12 minutes or until lightly browned. Remove from oven and sprinkle with remaining cheese. Return to oven until cheese is melted.

Makes 8 servings.
