1 1 / 2 cup all-purpose flour
1 cup rolled oats
1 tsp. tablespoon baking powder
2 pinches salt
1 / 2 cup chopped walnuts or pecans
2 ripe bananas mashed
1 egg
1 / 3 cup canola oil
1 / 3 cup maple syrup

Cooking Instructions:

In a bowl, combine dry ingredients. In another bowl, mix mashed bananas with liquid ingredients. Pour the mixture of liquid ingredients over dry ingredients and stir just until moistened.

Place dough in greased muffin tins and bake at 350 degrees F for 15 to 20 minutes. Cool slightly. Unmold.

Makes about 8 large muffins.
