6 eggs
1 / 4 cup milk
1 tsp. tablespoons finely chopped shallots
1 / 4 teaspoon of. teaspoon salt
3 tbsp. tablespoon butter
8 slices cooked bacon
4 English muffins, halved, roasted and buttered
8 slices tomato
8 slices cheddar cheese melted
In a medium bowl, lightly beat eggs. Stir in milk, shallots and salt.
In a large skillet, melt the butter. Pour the egg mixture and cook over low heat, stirring constantly, until eggs have reached desired doneness.
Top each muffin half of 1 slice of bacon and 1 slice tomato, secure it to distribute the egg mixture. Cut the slices of cheddar cheese diagonally and place on the egg mixture. Broil preheated oven until melted frromage.
Makes 4 servings.
