1 / 4 cup vegetable oil
1 1 / 2 tsp. tablespoon lemon juice
2 tsp. teaspoon fresh oregano leaves
1 clove garlic, minced
1 1 / 2 cups penne pasta, cooked and drained
1 cup feta cheese crumbled Canadian
1 cup tomatoes, seeded and diced
1 cup cucumber, seeded and diced
1 / 2 cup black olives pitted and sliced
1 / 2 cup green pepper, sliced
2 tsp. chopped parsley
2 tsp. tablespoon chopped shallots
Salt and pepper

Cooking Instructions:

To make dressing, in blender at high speed to reduce to a creamy oil, lemon juice, oregano and garlic.

In a large bowl, combine pasta with feta, tomatoes, cucumbers, olives, green pepper, parsley and shallots. Drizzle with dressing; stir well, add salt and pepper to taste. Refrigerate at least an hour before serving to allow flavors to mingle.

Makes 4 main dish servings
