Rustic cake: Date Added: 16 Oct 2010 Ingredients:

2 cups flour
4 tsp. teaspoon baking powder
1 1 / 2 tsp. teaspoon baking soda
1 tsp. tablespoon cinnamon
1 tsp. teaspoon salt
2 eggs
1 / 2 cup cooking oil
1 / 2 cup apple juice
1 / 4 cup honey
1 cup packed brown sugar
3 apples, peeled coarsely grated
1 1 / 2 cup coarsely chopped dates
1 cup coarsely chopped pecans

Cooking Instructions:

Grease a tube pan. Preheat oven to 375 degrees F. Combine dry ingredients. Beat the eggs until pale and fluffy, add oil slowly while beating.

Add apple juice, honey, brown sugar and apples. Mix well.

Gradually add dry ingredients, beating with a wooden spoon. Add dates and pecans. Mix well.

Pour batter into pan and cook juqu'à is a blade inserted in center comes out clean, about 50 minutes. Cool before removing from pan.

Makes 4 to 6 servings
