Beef Provencal: Date Added: 10 Oct 2010 Ingredients:

2 onions chopped
1 bouquet garni
1 orange (peel only)
3 pounds cubed beef (1.5 kg)
2 cups white wine
olive oil
2 carrots cut into chunks
2 cups mushrooms, quartered
4 tomatoes, peeled and coarsely chopped
1 cup black olives
salt, pepper

Cooking Instructions:

In a large ovenproof dish (earthenware, ceramic or glass but not metal), combine the onion, bouquet garni, orange rind and beef. Pour the wine over, drizzle with olive oil, cover and marinate in refrigerator overnight (minimum 6 hours).

Preheat oven to 350 degrees F. Arrange the vegetables over the meat, salt and pepper, cover and cook for 2 hours.

Serve sprinkled with fresh pasta with a drizzle of olive oil and sprinkled with parmesan.

Makes 6 servings

Note: Bouquet garni: To prepare a bouquet garni, one can attach all strands of fresh herbs (usually including thyme, parsley, rosemary, celery leaves and bay leaf) and put dried herbs in a small bag of cheesecloth (cheesecloth).
