Potato Soup: Date Added: 20 Nov 2009 Ingredients:

4 Large potatoes diced
1 Small onion- diced
1 Cup whole milk (or you can use non-fat)
1 Cup diced ham
1/2 celery stalk- diced
2 Tbs Butter
2 Tbs shortening
salt and pepper to taste

Cooking Instructions:

Melt shortening in dutch oven. Add onions and celery and cook until onions are opaque. Add ham and potatoes and enough water to cover potatoes by 1/2 inch. Add salt and pepper. Gently boil till potatoes are very tender. Add the milk and the butter heat till hot but not boiling. Serve
