Zucchini Carrot Muffins: Date Added: 12 Nov 2009 Ingredients:

1 18 ounce package carrot cake mix
1 egg
1/2 cup applesauce
1/4 cup vegetable oil
1 1/2 cups shredded zucchini
1/2 cup raisins
1/2 cup chopped pecans

Cooking Instructions:

In a mixing bowl, combine the cake mix, egg, applesauce and oil; mix well. Stir in the zucchini, raisins and pecans. Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 25-30 minutes or until muffins test done.

Yield: about 16 muffins.
