Coffee Walnut Chocolate Chip Muffins: Date Added: 12 Nov 2009 Ingredients:

1/2 cup butter or margarine -- softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
2 tablespoons instant coffee -- up to 3
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs
2/3 cup milk
1 1/2 cups coarsely chopped walnuts
3/4 cup hershey's® semisweet chocolate chips

Cooking Instructions:

Heat oven to 350°F. Line twelve muffin cups (2 1/2 inches in diameter) with paper bake cups. In large bowl, beat butter, sugars, coffee and vanilla until creamy.

Stir together flour, baking powder and salt. Beat together eggs and milk; add alternately with flour mixture to butter mixture, stirring just to combine. Stir in walnuts and chocolate chips. Fill muffin cups half full with batter. Bake 20 to 25 minutes. Cool 5 minutes; remove from pans to wire rack.

Makes 12 muffins
